In 2011, Lechon Champoy began its journey in Leyson Subdivision, Purok Masagana, Barangay Magsaysay, Polomolok, South Cotabato. The business was founded by Charles Martin Pasuelo Dela Cruz, fondly known as "Champ," who drew inspiration from the meat stand business of his parents, Dondon Dela Cruz and Margie Pasuelo. Their successful venture laid the foundation for what would eventually become Lechon Champoy.
